It took years of ordering beet salads in restaurants to finally realize that I should be making my own dream beet salad at home. If a beet salad is on the menu, I order it. Even though Marc is not a beet or walnut lover, he’s always pleasantly surprised that he likes the combination of beets, soft cheese and nuts. I just want to say duh, but that’s not nice.
There are a few components to the recipe, but all are simple tasks that you can do while your beets steam-roast in the oven. After you assemble the salad, the most perfect thing happens. The vinaigrette takes on the color of the beets and creates the prettiest sunset colors that settle onto the goat cheese. It’s everything I hoped it would be.

Above is my “bitty” mixed box of fresh produce and I’ve listed out the Michigan-made goods I added to my order. The onion rye bread is from Ann Arbor’s Zingermans and it arrived incredibly fresh. The Lush Nuts come from Kalamazoo, McClure’s bloody mary kettle chips from Detroit, Ackroyd’s Scottish shortbread from Redford, Maria’s salsa from Hamtramck, El Miagro corn tortillas from Detroit, Neu’s Kombucha from Royal Oak, Chez Chloe’s French Lava Cakes from Eastern Market and Corridor Sausage from Detroit. We had fun tasting so many new local products that I had been anxious to try.
