Having dinner with friends at our home or theirs always makes my heart happy. Catching up, laughing and learning things from each other is, for me, the best way to spend a few hours. At the end of these happy gatherings, Marc and I laugh over the evening’s highlights as we get ready for bed.
To get the most out of our time together with friends, I like to make side dishes that can be made ahead of time and refrigerated until it’s time to eat. A quick stir is the only thing left to do, but isn’t mandatory if you’re too engrossed in conversation. If I’m hosting the party, it also means the sink and countertop can be free of most dishes. Bonus!
My friend, Pam, recommended this salad when I was looking for something to bring to a barbecue and it sounded good. I really enjoy a good BLT on hearty bread with summer’s best tomatoes, fresh lettuce, good mayonnaise and thick, crispy bacon. This salad takes the best parts of the sandwich and tosses it with a garlicky buttermilk dressing. You just can’t go wrong there.
This recipe makes a huge salad and can be easily cut in half, if you like. The recipe below is perfect, though, for a large, hungry group. Our gathering of 6 adults and two kiddos made a serious dent thanks to second and third helpings.
