Strawberry Rhubarb Lemonade Compote

Strawberry Rhubarb Lemonade Compote Recipe // @nicoledula

In honor of Beyonce’s album, Lemonade, I’m serving up this strawberry rhubarb lemonade compote that I would totally make for Beyonce if she came to my house. She’s veegz now, right? It’s sweet and tart with a lemony zing from long strips of lemon peel that soften as it cooks. While Beyonce is making us crave lemonade, I came across Tim’s anti-lemon zest manifesto that made me laugh and coincidentally had 3 recipes lined up that all included lemon. After far too much deep thought on lemons, I decided that for me,  lemon has its place. Even boldly mingling with strawberries and rhubarb… Continue reading

Olive Oil Banana Nut Bread

Olive Oil Banana Nut Bread Recipe // @nicoledula

Banana bread is one of my favorite comfort foods, yet, I rarely make it! What’s wrong with me?? It reminds me of childhood church picnics where the older ladies sliced the banana bread thin and smeared each slice with (let’s be real) margarine. I could eat that forever. Eleven years ago now, my sister-in-law suffered a terrible loss. She was still so young at 17 and she needed us. We invited her over to our new apartment and she wanted to bake something together. A quick search of the internet produced an EXTREME banana nut bread recipe and it was… Continue reading

Grapefruit Blueberry Scones

Grapefruit Blueberry Scones Recipe // @nicoledula

Important news, I pre-ordered my paczki for Feb. 9! I can’t risk not getting the lime-curd cream filled paczki with the raspberry glaze I fell in love with last year. Paczki eating is a pretty big deal around here. I mean, nobody wants the sad ones from the grocery store, right? Also, now that it’s January, I’m craving scones. It happens to me every January. I see all of the pretty winter citrus and right after eating my weight in drippy, pink, cara cara oranges, I start thinking about citrus scones. That tang from the citrus and buttermilk magically balances… Continue reading

Smashed Crispy Potatoes with Eggs + Lemon Vinaigrette

Smashed Crispy Potatoes with Eggs and Lemon Vinaigrette Recipe // @nicoledula

Marc says my biggest food pet peeve is under-seasoned potatoes and I guess it’s true. I really do love potatoes, but if they aren’t seasoned, what’s the point? Higher-end brunch or breakfast places usually know how to make good potatoes, but many of the little diners around here will serve me the most perfect-looking and crisp hash browns that are sadly very bland. There’s not much the salt shaker can do for you when the potatoes haven’t seen much salt before they hit your plate. I remember a Serious Eats article where J. Kenzi Lopez-Alt tested whether seasoning as you go… Continue reading

German Christmas Stollen 2015

German Christmas Stollen 2015 Recipe // @nicoledula

This is the 7th (!!) year I’ve made stollen and it’s the 4th year I’ve made a quadruple batch with my friend, Nancy. We call it the stollen workshop and this year I went over to her place after work on Friday, picked up pizzas and we set out our equipment and did some pre-measuring. Marc and I went back on Saturday afternoon after our morning kickboxing class and the last loaf was out of the oven around 6:30 pm. We watched holiday movies while we waited for the last loaves to cool. My Oma used to bring foil-wrapped loaves of stollen… Continue reading

Pumpkin Tahini Overnight Oats

Pumpkin Tahini Overnight Oats Recipe // @nicoledula

Back in our newlywed days, when we couldn’t afford cable, I had to find something to replace my addiction to Food Network. The answer is always PBS, no? Many of those early Saturdays were spent getting acquainted with America’s Test Kitchen, Lidia Basitanich, Julia Child + Jacques Pepin and hey girl hey, registered dietician Zonya Foco. You may not know that last lady, but she talked about low cal and low fat cooking in her oak-cabinet lined kitchen. She’d go to the grocery store to navigate the aisles in a healthy way and exercise with a trainer. In later seasons, she… Continue reading

Beet Gravlax

Beet Gravlax Recipe // @nicoledula

By some cruel twist of fate, I live in the Great Lakes State, but have trouble finding really fresh fish in my city. If you’re making ceviche or gravlax, you don’t want to be on the fence about how fresh the fish is. This year at the farmers market, we have a fish vendor that offers walleye, salmon, whitefish and trout that was caught the day before in cold Lake Huron. I did a little dance of joy, knowing I could finally make ruby-hued beet gravlax at home (!!!) You need a few tools and a couple of days, but… Continue reading

Diner-Style Blueberry Pancakes

Diner-Style Blueberry Pancakes Recipe // @nicoledula

This summer is flying by, right? The weekends have been fun, but busy. Sometimes while we run errands, we’ll have a quick breakfast at one of the local diners. Some are better than others and I judge a good one by the quality of their pancakes. One place in particular, Ken’s Cozy Cafe, could be in an episode of Golden Girls with their Floridian pink and aqua booths, but boy do they make a good pancake. A pancake that dares to hang over the edge of the plate it’s served on. I posted a pic of Ken’s pancakes on Instagram one morning and there… Continue reading

Frisée Salad with Mushrooms and Fried Eggs + Week 1 of Whole 30

Frisée Salad with Mushrooms and Fried Eggs + Starting Whole 30 // @nicoledula

If you normally roll your eyes at special diets, I feel you. I’m more of an “everything in moderation” person and I try to eat balanced meals while indulging occasionally, but I was feeling like things were a little off-balance for us lately. Maybe it was all the burgers + cookies + bourbon + biscuits + hot chicken in Louisville and Nashville?? I was following along with Erica’s Whole 30 experience and her beautiful and simple meals gave me the push I needed to try it for myself. If you’ve never heard of Whole 30, the rules are here. There is a… Continue reading

Chocolate Olive Oil Loaf Cake with Coconut Milk

Chocolate Olive Oil Loaf Cake with Coconut Milk // @nicoledula

I’m back from 4 days in Louisville, KY and 2 days in Nashville, TN! There was cotton candy, modern art, sorghum, Mint Juleps, antique shops, beer, paletas, peaches, hot chicken, smoked ham and bourbon. So much smoked ham and bourbon. Did you follow along on Instagram? I did a bunch of research on where to go and more importantly, what to eat and everything just seemed to fall into place perfectly. I’ll tell you more about that soon, but first, chocolate loaf cake! I made this loaf cake, hoping for something big in chocolate flavor, moist from extra virgin olive… Continue reading
