Lalo’s Famous Cookies or Gwyneth Paltrow Cookies

Goodness, I love a good thumbprint cookie. One of the first things I ever baked was the classic all-butter thumbprint cookie with the jelly center. The best part was making the little well and filling it with jelly. My Mom always insisted on using raspberry jelly with seeds and now for me, too, ┬áit is my thumbprint filling of choice. These thumbprint cookies are all grown-up. They have barley flour, ground almonds, no butter and no refined sugar. They are vegan, even. Now, if I make something that is more health-conscious, I don’t like shouting it from the rooftops when… Continue reading

Rugelach with Pecans, Brown Sugar and Cinnamon

Anyone else have a partial bag of pecans left over from the holidays? Did you spend an arm and a leg, too? Behold this impressive cookie that you probably have everything on hand to make! I knew the moment I saw these that my pecans were destined for greatness. I made them for a party hoping that they would disappear quickly, but these tiny treats were hidden among a large dessert spread and most of them returned with me. Of course, I was secretly happy. The pastry has a subtle tang from the cream cheese and is barely sweet. Use… Continue reading

Chocolate Chunk Oatmeal Cookies with Pecans and Dried Cherries

First, in non-cookie news, I’m sorry I haven’t been on your blogs and looking at your delicious recipes lately! This Saturday my baby brother is marrying my sister-in-law and I am the Matron of Honor/Wedding Planner. It’s been so fun planning this bash and I look forward to a beautiful day. I am out-of-my-mind busy right now and I have a pretty important speech to get right, but I made cookies… The first time I made these was a few years back. We were invited to a family cottage in northern Michigan and I wanted to bring something special that… Continue reading

Chocolate Mudslide Cookies

I think these are the prettiest cookies I’ve ever seen. Mini toasted marshmallows in a pretty pattern on top of a chocolate cookie? Perfection. I saw these recently on a blog and not only did they look amazing, but the ingredients are items any baker will have in their pantry. Even though I had some random pistachios and peanuts in the pantry, I did buy deluxe mixed nuts for the recipe and I’m glad I did. I liked the nuts so much that next time I make these I’ll scale back a bit on the chocolate chips and add more… Continue reading

Love For The Whoopie Pie

I have a ridiculously large binder with printed recipes that I find all over the internet. It is filled to the max with fantastic looking recipes that I really, really want to try. I recently purchased binder #2 as a destination for the worthiest of tasty recipes. I was quite excited about my new binder, but since then I haven’t had any hands-down “Binder #2” winners and I was a little sad about that. Last night, however, I fell in love with the Pumpkin Whoopie Pie. Holy smokes are these things delicious! Just the other day I was on Culinerapy… Continue reading
