Sometimes you just need a hearty fall salad in your life. Now that it’s pretty chilly in Michigan and I saw snow floating in the air on Saturday (!!!) it’s ok to turn on the oven and roast things again. Ah, summer. The time of year when a salad like this is dinner and everyone is happy ’bout it. This salad is inspired by one I had at Selden Standard recently with seared halloumi, cantaloupe, fresh snap peas and radish. Fresh snap peas were hard to find last weekend and I wasn’t about to mince radishes, so I picked up what was fresh and pretty at the farmers market. I LOVE crossing things off my to-do list and this weekend, we really packed in some overdue chores. Bo-ring, I know, but it felt so good! Marc washed both of our cars, we weeded, trimmed the hedges and washed the windows. I used barely soapy hot water and a squeegee for the windows like This Old House taught me to do. These zucchini noodles with flavorful puttanesca was dinner for day 30 of whole 30 and it was delicious. I changed the original recipe quite a bit and thought you might like to try it. The puttanesca sauce is something I’ve never made before, but if you love olives and capers, it’s a real treat. The anchovies are optional, but they dissolve into the sauce and add an extra flavor. I’m eating fresh strawberries by the handful and loving it. The lettuce, kale and radishes are going into salads this week and the beets and beet greens will make the prettiest hot pink smoothies. I love putting garlic scapes on pizza, but we were still on whole 30, so I took a chance and added them to sausage and peppers and it was so good! I’ve included the easy recipe below if you want to make it for yourself. This week we received: avicenna butterhead lettuce, baby beets, garlic scapes, lacinato kale, French breakfast radishes and strawberries.

It’s day 30 of whole 30, so what I’m eating today (recorded below) is more of a projection, but we made it! We cheated a little on our anniversary (day 26) and ordered flourless chocolate cake for dessert, but we stuck to the diet for the rest of the 30 days. This last week, our motivation was helped along by how good we’re feeling and we hope to continue eating with these principles in mind. We will be adding back beans, corn tortillas, a bit of dairy, chocolate and try to eat bread and sugar in moderation. We’ll see how… Continue reading
