Creamy Black Bean Dip

Quick Creamy Black Bean Dip Recipe // @nicoledula

I’m just not that into football, but I do love the snacks. If you root for the snacks, you always win. On Sunday we watched the game with Marc’s parents and I brought this dip. I’ve made it several times now and each time I get the look that says we’ll never eat all that. The bowl is always emptied, though! Best of all, it’s so easy, too. My mother-in-law made minestrone with a ton of veggies, a colorful salad with sesame dressing, meatballs, shrimp cocktail and apple crisp. A fun mix! We busted this dip out at half time and I was scooping… Continue reading

Marinated Summer Squash

Marinated Summer Squash Recipe // @nicoledula

Michigan cannot decide if it’s summer or fall right now with swings in temperature from 90 degrees to low 60’s and then back up to 80. That’s fine with me because I can’t decide if I’m ready to let summer go, either. I spent last weekend with my sister in law and we walked around the Ann Arbor farmers market under gray skies with our jackets on. We still saw basil, tomatoes, corn and summer squash, so I guess it’s not too crazy to share this recipe in September. I feel like many of us end up with extra zucchini or summer… Continue reading

Caramelized Onion Spinach Dip

Caramelized Onion Spinach Dip // www.dulanotes.com @nicoledula

I can’t help it you guys, I love spinach dip. Well, I knew it could be improved upon, but there’s something about that creamy dip with fresh bread that gets me. After I made Everything Focaccia a while back, I thought it would be incredible with a good spinach dip. I’m so happy I was right about that. This dip is heavy on the spinach and flavor with the help of sweet caramelized onions. I don’t like spinach dips that are soupy with sour cream or frugal with the veggies. This dip is 100% from scratch, so no dried mixes here.… Continue reading

Everything Roasted Pumpkin Seeds

There’s nothing like a good weekend. This last one was extra good because my sister-in-law Bethany was in town and we ate kimchi fried rice, Jeni’s ice cream and she taste-tested a new kale salad recipe for me. We celebrated my mother-in-law’s birthday and after all of that food, we decided to take a Barre workout class together. I woke up the next day a little sore, but that’s a crazy good workout. I wish I had a batch of these everything roasted pumpkin seeds to share with her, too. If you love everything bagels or everything focaccia or everything anything, these seeds… Continue reading

Slow Cooker Vanilla Bean Pumpkin Butter

Slow Cooker Vanilla Bean Pumpkin Butter // www.dulanotes.com @nicoledula

Last year my CSA pumpkin was turned into this pretty stuffed pumpkin and this year I wanted pumpkin butter. I read about Stephanie’s Pear Quince Butter and her technique for caramelizing the butter in the slow cooker with vanilla bean was genius. Inspired, I was ready to make pumpkin butter magic. I have a large slow cooker and figured I’d need two pie pumpkins. My CSA farmer, Yvonne, generously gave me a second pumpkin after I told her what I was making and it just made my day. On a rainy Saturday morning I put all of the ingredients in the slow cooker and let… Continue reading
