Bacon + Kimchi Cauliflower Fried Rice

Bacon + Kimchi Cauliflower Fried Rice Recipe // @nicoledula

As you may have seen on Instagram/Snapchat last week, I tried Goop’s nutritious kimchi cauliflower rice with her buddy Cameron Diaz’s addition of lean beef and a fried egg, but it didn’t capture the magic of our first cauliflower fried rice experience. It was a bit watery and needed more kick. I did some more homework and looked at several recipes, including my favorite kimchi fried rice and the original Nom Nom Paleo recipe we tried during whole 30. The resulting recipe was a success and I may have high-fived Marc over it. I grew up on rice and will always love it,… Continue reading

Easiest Blender Cauliflower Rice

Easiest Blender Cauliflower Rice Recipe // @nicoledula

Last June during Whole 30, I found myself poring over grain-free recipes. The diet never left me hungry, but I did miss certain textures and seriously craved comfort food. Cauliflower rice sounded odd, but fried rice for dinner sounded like a lifesaver. It turned out to be one of my favorite meals. The only problem is that making cauliflower rice is typically a real pain. Most recipes call for it to be blitz up in a food processor and I really hate cleaning my food processor. However, now I’ve discovered this blender method and YOU MUST MAKE ALL OF YOUR CAULIFLOWER… Continue reading

Vegetarian Black Bean, Kale and Quinoa Enchilada Bake

Vegetarian Black Bean, Kale and Quinoa Enchilada Bake Recipe // @nicoledula

You’re going to like this one. It’s hearty comfort food made with nutritious ingredients for a cozy meal you can feel good about. I’ve been all about comfort food this winter, but it sadly can’t always be carbs, carbs, carbs. This casserole comes together easily and will impress your vegetarian and non-vegetarian friends alike. It’s a great dish to bring to a friend, new mom or anyone who could use a meal hug. It freezes great, too. Remove the cheddar cheese and you have a full-flavored vegan meal. Marc said this filling would be great on nachos and I say… Continue reading

Vegan Roasted Autumn Panzanella Salad

Roasted Autumn Panzanella Salad Recipe // @nicoledula

Sometimes you just need a hearty fall salad in your life. Now that it’s pretty chilly in Michigan and I saw snow floating in the air on Saturday (!!!) it’s ok to turn on the oven and roast things again. I roasted up some of my favorite fall veggies and combined them with kale, red onion and a punchy lemon vinaigrette. The roasted brussels sprouts and delicata squash get crisp and caramelized while the onion and the vinaigrette add a touch of acid to heighten and balance those flavors. The bread cubes act like delicious sponges, crispy on the outside, but… Continue reading

Vegetarian Taco Pasta Salad

Vegetarian Taco Pasta Salad Recipe // @nicoledula

First of all, hey! Vacation is way over and I’m back at it. Back at it plus Marc and I started kickboxing! A new studio opened up near our house and this morning we had our third class, at 5:45 am (big eyes emoji). It’s going really well. I love how I feel after class and I’m learning so much. Hopefully we can keep this going! Maybe I was still high on endorphins from last Saturday’s class, but it was the most beautiful day! It was sunny, warm and perfect for the barbecue we had planned. We invited Marc’s cousin, Chris, and… Continue reading

Marinated Summer Squash

Marinated Summer Squash Recipe // @nicoledula

Michigan cannot decide if it’s summer or fall right now with swings in temperature from 90 degrees to low 60’s and then back up to 80. That’s fine with me because I can’t decide if I’m ready to let summer go, either. I spent last weekend with my sister in law and we walked around the Ann Arbor farmers market under gray skies with our jackets on. We still saw basil, tomatoes, corn and summer squash, so I guess it’s not too crazy to share this recipe in September. I feel like many of us end up with extra zucchini or summer… Continue reading

CSA 2015: Week 3 + Ratatouille

CSA 2015: Week 3 // @nicoledula #csa

Before I forget, I want to tell you that I’ve made a CSA Pinterest board! I’ll be pinning recipes that match up with the kinds of fruit and vegetables I get in my share. Last weekend, I took the romaine, green onions and radishes to west Michigan and we made a huge salad with my mom’s vinaigrette dressing. It was lovely. I’ve been using the beets and beet greens in smoothies this week and I put the garlic scapes in my first ratatouille. Even though it isn’t a traditional ratatouille ingredient, I thought the scapes mixed well with the eggplant, onion,… Continue reading

Frisée Salad with Mushrooms and Fried Eggs + Week 1 of Whole 30

Frisée Salad with Mushrooms and Fried Eggs + Starting Whole 30 // @nicoledula

If you normally roll your eyes at special diets, I feel you. I’m more of an “everything in moderation” person and I try to eat balanced meals while indulging occasionally, but I was feeling like things were a little off-balance for us lately. Maybe it was all the burgers + cookies + bourbon + biscuits + hot chicken in Louisville and Nashville?? I was following along with Erica’s Whole 30 experience and her beautiful and simple meals gave me the push I needed to try it for myself. If you’ve never heard of Whole 30, the rules are here. There is a… Continue reading

Miso-Parmesan Shishito Peppers

Miso-Parmesan Shishito Peppers Recipe // www.dulanotes.com @nicoeldula

Today a group of bloggers are celebrating Emily of The Pig & Quill’s virtual baby shower! She’s having a little girl and we’re celebrating the best way we know how, with delicious food. Emily is a food maven who creates the most unique recipes and I thought she might appreciate this umami-rich appetizer. Our Trader Joe’s just started carrying shishito peppers and I’m already on my 4th bag. They are perfect simply blistered in a skillet of shimmering olive oil and finished with flaky sea salt, but sometimes you want to mix it up. Especially if you’re trying to impress a… Continue reading

Beet Salad with Whipped Goat Cheese and Maple Walnuts

Beet Salad with Whipped Goat Cheese and Maple Walnuts Recipe // www.dulanotes.com @nicoledula

It took years of ordering beet salads in restaurants to finally realize that I should be making my own dream beet salad at home. If a beet salad is on the menu, I order it. Even though Marc is not a beet or walnut lover, he’s always pleasantly surprised that he likes the combination of beets, soft cheese and nuts. I just want to say duh, but that’s not nice. There are a few components to the recipe, but all are simple tasks that you can do while your beets steam-roast in the oven. After you assemble the salad, the… Continue reading
