Bacon + Kimchi Cauliflower Fried Rice

Bacon + Kimchi Cauliflower Fried Rice Recipe // @nicoledula

As you may have seen on Instagram/Snapchat last week, I tried Goop’s nutritious kimchi cauliflower rice with her buddy Cameron Diaz’s addition of lean beef and a fried egg, but it didn’t capture the magic of our first cauliflower fried rice experience. It was a bit watery and needed more kick. I did some more homework and looked at several recipes, including my favorite kimchi fried rice and the original Nom Nom Paleo recipe we tried during whole 30. The resulting recipe was a success and I may have high-fived Marc over it. I grew up on rice and will always love it,… Continue reading

Easiest Blender Cauliflower Rice

Easiest Blender Cauliflower Rice Recipe // @nicoledula

Last June during Whole 30, I found myself poring over grain-free recipes. The diet never left me hungry, but I did miss certain textures and seriously craved comfort food. Cauliflower rice sounded odd, but fried rice for dinner sounded like a lifesaver. It turned out to be one of my favorite meals. The only problem is that making cauliflower rice is typically a real pain. Most recipes call for it to be blitz up in a food processor and I really hate cleaning my food processor. However, now I’ve discovered this blender method and YOU MUST MAKE ALL OF YOUR CAULIFLOWER… Continue reading

Smashed Crispy Potatoes with Eggs + Lemon Vinaigrette

Smashed Crispy Potatoes with Eggs and Lemon Vinaigrette Recipe // @nicoledula

Marc says my biggest food pet peeve is under-seasoned potatoes and I guess it’s true. I really do love potatoes, but if they aren’t seasoned, what’s the point? Higher-end brunch or breakfast places usually know how to make good potatoes, but many of the little diners around here will serve me the most perfect-looking and crisp hash browns that are sadly very bland. There’s not much the salt shaker can do for you when the potatoes haven’t seen much salt before they hit your plate. I remember a Serious Eats article where J. Kenzi Lopez-Alt tested whether seasoning as you go… Continue reading

Marinated Summer Squash

Marinated Summer Squash Recipe // @nicoledula

Michigan cannot decide if it’s summer or fall right now with swings in temperature from 90 degrees to low 60’s and then back up to 80. That’s fine with me because I can’t decide if I’m ready to let summer go, either. I spent last weekend with my sister in law and we walked around the Ann Arbor farmers market under gray skies with our jackets on. We still saw basil, tomatoes, corn and summer squash, so I guess it’s not too crazy to share this recipe in September. I feel like many of us end up with extra zucchini or summer… Continue reading

Pork Scaloppine with Fennel Salsa Verde

Unbreaded Pork Scaloppine with Fennel Salsa Verde Recipe // @nicoledula #whole30 #glutenfree

I LOVE crossing things off my to-do list and this weekend, we really packed in some overdue chores. Bo-ring, I know, but it felt so good! Marc washed both of our cars, we weeded, trimmed the hedges and washed the windows. I used barely soapy hot water and a squeegee for the windows like This Old House taught me to do. It’s my favorite housekeeping tip ever. In anticipation of the 90 degree day, we finished by noon and rewarded ourselves with a vanilla malt and later this pork scaloppine for a late lunch. I made this dish twice last week and… Continue reading

CSA 2015: Week 2 + Sausage with Onions, Peppers + Garlic Scapes

CSA 2015: Week 2 // @nicoledula

I’m eating fresh strawberries by the handful and loving it. The lettuce, kale and radishes are going into salads this week and the beets and beet greens will make the prettiest hot pink smoothies. I love putting garlic scapes on pizza, but we were still on whole 30, so I took a chance and added them to sausage and peppers and it was so good! I’ve included the easy recipe below if you want to make it for yourself. This week we received: avicenna butterhead lettuce, baby beets, garlic scapes, lacinato kale, French breakfast radishes and strawberries.

Frisée Salad with Mushrooms and Fried Eggs + Week 1 of Whole 30

Frisée Salad with Mushrooms and Fried Eggs + Starting Whole 30 // @nicoledula

If you normally roll your eyes at special diets, I feel you. I’m more of an “everything in moderation” person and I try to eat balanced meals while indulging occasionally, but I was feeling like things were a little off-balance for us lately. Maybe it was all the burgers + cookies + bourbon + biscuits + hot chicken in Louisville and Nashville?? I was following along with Erica’s Whole 30 experience and her beautiful and simple meals gave me the push I needed to try it for myself. If you’ve never heard of Whole 30, the rules are here. There is a… Continue reading

Vegan Raw Strawberry Crumble

Vegan Raw Strawberry Crumble Recipe // www.dulanotes.com @nicoledula

How was your weekend? I hope it was good! For the past few Easters, we’ve had dinner at a friend’s house. I plan the menu with our hostess, Nancy, digging through my Pinterest saves for recipes we can make. This year we decided on Mom’s deviled eggs (the guys go crazy for them), Cookie+Kate’s green goddess hummus, Bacon-wrapped pork loin, beet salad with whipped goat cheese + maple walnuts, green beans sprinkled with summer savory, spaetzle and chocolate cake with espresso + bourbon buttercream and crumbled chocolate cookies (!!!) We split the menu up and I spent the better part… Continue reading

Vegan Roasted Cauliflower + Tahini Lemon Vinaigrette

Selden Standard's Roasted Cauliflower + Tahini Lemon Vinaigrette Recipe // www.dulanotes.com @nicoledula

I love eating out. It provides inspiration that I can bring back to my kitchen and I get excited about new flavor combinations. When I took my first bite of the roasted cauliflower at Selden Standard, I tasted the tahini + cumin + the zing of the pickled peppers mingling with the caramelized cauliflower. It was perfect. The dish isn’t fussy, but has layers of flavor. I’d never heard Marc rave about a vegetable dish like he did about this one. Chef Andy Hollyday from Selden Standard was interviewed on a local news show recently and shared how he makes his famous roasted… Continue reading

Tahini Celeriac and Potato Mash

Vegan Tahini Celeriac and Potato Mashi // www.dulanotes.com @nicoledula

I’m really excited for this three day work week. My sister-in-law is hosting Thanksgiving dinner for the first time, which means we’ll have sweet potatoes and I’m really looking forward to that. We’re making Erika’s beautiful recipe. The dinner will begin with growlers of local beer, spiked cider and Mom’s deviled eggs. Then we’ll have turkey, fresh rolls, stuffing, cranberry sauce, green beans, red skin potatoes and pomegranate kale salad. For dessert my mother-in-law is bringing a pumpkin roll and cheesecake. This Thanksgiving gathering will be unique because Marc and I usually go to my Mom and Dad’s while my… Continue reading
