As if hearing Prince’s, “I Want To Be Your Lover” TWICE wasn’t reason enough to call it a great weekend, the rest of it was pretty spectacular, too. We packed so much good stuff into the long 4th of July weekend. Some highlights include: barbecues, Dutch bakery cronuts, shrimp tacos, bocce ball, cool mornings on my parents’ deck, fireworks, ice cream, loads of sunshine and long walks.

We almost made this grilled pineapple over the weekend, but we just couldn’t do it all. Don’t worry, though, I’ll still make this all summer long. It’s hard to improve upon ripe fresh fruit, but something magical happens when you grill it. The sugars in the fruit surface and sprinkled with extra sugar, a magnificent caramel glaze forms. It’s summer dessert perfected. Easy and light for after you devour whatever else came off the grill.

These just happen to be vegan and gluten-free for accommodating all of your friends and family no matter the dietary restriction. These delicious rings need no accompaniment, but there’s not much that isn’t improved with a good scoop of vanilla ice cream or coconut whipped cream. Long live summer.

  1. Wow.. I’m listening to Prince, the week of his death. I’ve got some pineapple, and I want to grill them. The first recipe that appeals to me is this one because of the coconut… and the first line I read “As if hearing Prince’s, “I Want To Be Your Lover”…”

    I guess I’m using THIS recipe.

    • It’s meant to be, Deanna! I forgot about this great Prince memory and I’m very glad you’ve reminded me. I should re-make this immediately while listening to Prince, of course.
