You know how when you’re going on vacation or away for a long weekend that the days before you leave are crazy town? Well, I was in the midst of that crazy, yet I didn’t want to give up my CSA share. Our CSA offers a Wednesday pick-up at another farmers market, which is great. What’s another to-do on the list, right?
Kaylee at Raub Rae farm was incredibly sweet. We had never met because her post is at the other location. She had my share sitting in her air conditioned car for a while to save it from the 90+ degree heat and humidity we had that day. She pulled out the share and to my surprise, they had packed me a FULL share instead of my normal half share. I was a little, “oh yeah!” and “oh no!” at the same time. I was leaving in two days! On my drive home I thought about a plan of action for my massive amount of produce.
I opened the box and my share burst out of the top. I transferred it to the sink and it completely filled the sink. I decided to wash all of the greens and give them a spin in the salad spinner, hoping to make them last longer. I packed the washed and dried leaves in plastic baggies with a piece of paper towel. And you know what? My swiss chard, kale, radicchio and green leaf lettuce was just as beautiful as I had left it.
I made a huge green salad with chopped squash and a delightfully tangy mustard vinaigrette for my sister-in-law Bethany and I after our long drive home from Mackinaw Island. It was just what we needed.
This week we received 2 heads of green lettuce, french breakfast radishes, radicchio, beets with their greens, 2 huge bunches of swiss chard and 3 kinds of summer squash.
