While I’m talking about my favorite things (you), I must tell you about this kimchi fried rice. I make it all. the. time. It’s one of those perfect weeknight meals that comes together quickly and you can’t believe you made it yourself. It’s flavorful, beautiful and needs to go into your weeknight routine, too. You can go the extra step and make your own kimchi and I have a link in the recipe notes for one with a vegetarian option, but I opt to send Marc to the Asian grocery store on his way home from work. Kimchi is funky and flavorful with a hint of spice. The fried rice tames some of the strong flavors in the kimchi that many American palates aren’t used to. When I first bought kimchi I tasted it and wondered what in the world I was going to do with it. THIS is what you do with it.
