Sometimes getting dinner on the table during the week is a struggle. Especially when the sky is dark when I drive home from work and I’m craving something warm and satisfying. This one-skillet roast chicken is perfect for when you want a cozy meal with very little effort. If you’ve never made a whole chicken before, don’t let it intimidate you. Turn on the oven as soon as you walk in the door and then prepare your chicken with what you have on-hand. Soon the smell of roast chicken will fill the air and that few minutes of prep time is completely worth it. You can change up the flavors to what you like or what herbs are left in the fridge. No herbs or garlic? Just some butter and salt rubbed on top of the chicken will do the trick, too. Add a green salad or a steamed vegetable on the side and you have a beautiful meal.

While your chicken roasts, get a couple of things done around the house (boring) or watch an episode of What Not To Wear on Netflix. I’m not here to judge. Let’s take a moment to talk about these crispy potatoes. Cut them in half and place them cut side down in the skillet for a golden brown and crispy crust. The butter and chicken drippings make them crazy good. In just over an hour, you’ll have dinner ready and you’ve caught up on your favorite show. That’s my kind of multi-tasking.

  1. oh, man…I am all about potatoes cooked in chicken fat and butter! Few things smell as amazing as a roasted chicken! Also, I am so happy that What Not to Wear is on Netflix 😉

  2. I made a roast chicken the other night and it blew me away at how tasty it was. I should have stuffed leaves and butter under the skin though. I’ll use that tip for next time I do chicken since I already do that with turkey. And I just bought a nice belt because I’ve been watching so much WNTW lately!! Apparently you need a belt to be truly put together, so that’s how WNTW has changed my fashion sense 🙂
