I went to Whole Foods with an organized list of produce and came back with an incredible amount of chocolate. I blame the gorgeous stack of irregular chunks of Callebaut for my lapse in judgment. After coming to my senses, I evaluated the amount of chocolate I had purchased and could not in good conscience keep it all. I decided that peppermint bark would be my only chocolate indulgence at this time and I found a recipe for a manageable 8×8 size. I did the chocoholic walk of shame to the return counter and exchanged my 1 pound hunks for 6 oz. pieces. It was all worth it when I took my first bite of chilled peppermint bark. The chocolate just melts in your mouth while you get the contrasting crunch of peppermint candy.
I splurged on organic candy canes and they were so pretty and pinkish without the artificial color. I gave Marc a piece and he went crazy for it. Use the best quality chocolate you can get your hands on and you will end up with heavenly shards of crunchy, creamy peppermint bark.
