Summer Squash Olive Oil Bread with Lemon Crunch Glaze

We have reached that special time in our CSA where we have received a ton of summer squash and I have to start getting creative. I personally love steamed squash and sometimes I add a touch of mayonnaise. I realize I just grossed out a few of you, but my Dad always loved it this way and I do, too. Marc is less fond of this vegetable and has not had one complaint about our CSA vegetables, but I am trying to avoid this by using our share in unique ways.

There are many recipes for zucchini bread out there, but since both zucchini and summer squash are similar, I wanted to see if I could use them interchangeably in a recipe. You can! I am completely smitten with this moist olive oil bread with lemon crunch glaze. It isn’t the most photogenic, but it makes up in for it in taste. Instead of pretty green flecks, you get a pop of yellow flecks from the summer squash.

It’s tender, slightly spiced and surrounded by a magical lemon sugar glaze. As I brushed the sugary glaze over the warm bread I started to worry that there was too much sugar going on and that I would find it too sweet, but the balance of sweet, spice and tart lemon is perfect.

    • Kasey – If you can believe it, this is my first zucchini/squash bread since I was a kid! Definitely a problem I needed to address, too 🙂

      Elizabeth – I know mayonnaise and squash sounds pretty gross, but I was thinking that if you served squash with say, a garlic aioli, it would sound much more appealing 🙂

  2. Looks good. Reminds me of a farm we stayed at outside of Verona, Italy. The proprietor made a bread from olive oil for us that looks similar to this. Looks fantastic. Can’t wait to try it!

  3. You made me laugh out loud with the mayo comment. I must admit, it did gross me out *a little* but I can imagine it actually is rather tasty.
    And, I’m with Kasey, anything glazed (with lemon, nonetheless) is at the top of my list. 🙂

  5. Just tried it. I put 1 cup and 1/4 sugar in it to lessen the sugar just a bit. Very good. So glad I tried it!!!

  6. I used to hate mayonaise, but now, I get it…I could get behind squash with a touch of it for sure.
    I’m loving the idea of a lemon glaze on a slightly spiced loaf! I also love the idea of yellow squash instead of zuchinni, especially for those people in my life that are adverse to green flecks in baked goods.

  7. I didn’t even have to look at the recipe to know this would be good; the name says it all. Then when I did look, those spices with that mellow squash are like an early herald of the coming Autumn. I can’t wait to try! Isn’t it nice when you surprise someone with something they thought they didn’t like?

  8. Zucchini bread is such a classic late summer tradition. I totally fell in love with this when I saw it at Lottie + Doof. Mayonnaise, the great divider.
