I’m just not that into football, but I do love the snacks. If you root for the snacks, you always win. On Sunday we watched the game with Marc’s parents and I brought this dip. I’ve made it several times now and each time I get the look that says we’ll never eat all that. The bowl is always emptied, though! Best of all, it’s so easy, too. I’ve tried to find out who started making this cheesecake in Marc’s family and I think I’ve traced it back to Marc’s (honorary) Aunt Ruthie, his grandma’s good friend. By some cruel twist of fate, I live in the Great Lakes State, but have trouble finding really fresh fish in my city. If you’re making ceviche or gravlax, you don’t want to be on the fence about how fresh the fish is. Sometimes you just need a hearty fall salad in your life. Now that it’s pretty chilly in Michigan and I saw snow floating in the air on Saturday (!!!) it’s ok to turn on the oven and roast things again. I roasted up some of my favorite fall veggies and combined them with kale, red onion and a punchy lemon vinaigrette. The roasted brussels sprouts and delicata squash get crisp and caramelized while the onion and the vinaigrette add a touch of acid to heighten and balance those flavors. It’s day 30 of whole 30, so what I’m eating today (recorded below) is more of a projection, but we made it! We cheated a little on our anniversary (day 26) and ordered flourless chocolate cake for dessert, but we stuck to the diet for the rest of the 30 days. This last week, our motivation was helped along by how good we’re feeling and we hope to continue eating with these principles in mind. I’m just starting week 3 of whole 30 and it’s strange how quickly you can settle into a habit that seemed so restrictive in the beginning.
