Memorial Day weekend was hot and humid, but I loved it. We made some tasty cheeseburgers on pretzel buns. Our gym had a special memorial day workout class and a new girl passed out! Sometimes you just want to eat something that makes you think of warmer weather and maybe sitting on a porch in Charleston. Marc and I spent 3 days there in 2009 (whoa) and it was 100 degrees every day. Unseasonably warm for that part of June they said. I’ve had this pie bookmarked from Bon Appétit since I first laid heart-eyes on it. It’s a rich chocolate pudding pie in a chocolate cookie crust with a torched meringue topping. Can you even? I’m just not that into football, but I do love the snacks. If you root for the snacks, you always win. On Sunday we watched the game with Marc’s parents and I brought this dip. I’ve made it several times now and each time I get the look that says we’ll never eat all that. The bowl is always emptied, though! Best of all, it’s so easy, too. My mother-in-law made minestrone with a ton of veggies, a colorful salad with sesame dressing, meatballs, shrimp cocktail and apple crisp. A fun mix! By some cruel twist of fate, I live in the Great Lakes State, but have trouble finding really fresh fish in my city. If you’re making ceviche or gravlax, you don’t want to be on the fence about how fresh the fish is. This year at the farmers market, we have a fish vendor that offers walleye, salmon, whitefish and trout that was caught the day before in cold Lake Huron. I typically love my trusty vinaigrette dressings and if I’m in the mood for something creamy, blue cheese is my go-to, but it’s hard to put a good ranch dressing in the corner, baby-style. There’s a reason it’s most American’s favorite dressing and why you just want to dip everything in it. First of all, hey! Vacation is way over and I’m back at it. Back at it plus Marc and I started kickboxing! Michigan cannot decide if it’s summer or fall right now with swings in temperature from 90 degrees to low 60’s and then back up to 80. That’s fine with me because I can’t decide if I’m ready to let summer go, either.
