Slow Cooker Pork Ragù with Gnocchi

Slow Cooker Pork Ragù with Gnocchi Recipe // @nicoledula

You may have noticed on social media that I’m a big fan of the Great British Baking Show on PBS. My girls Cindy, Emily, Sarah and Megan love it, too. The first American season aired a while ago and is now available on Netflix, if you want to catch up. I believe it’s called the Great British Bake Off in the UK and has been on the air for several years. I read that the first season on PBS is actually season 4 of the UK version or something like that. The show is a refreshing take on a baking competition because each person… Continue reading

Poached Cardamom Pears with Mascarpone + Honey

Poached Cardamom Pears with Mascarpone + Honey Recipe // @nicoledula

I have had this dessert on my mind since summer. Ever since I had that perfect wine-poached peach with whipped mascarpone at 9 Bean Rows in Traverse City. Such a simple dessert, but completely delicious. I put a winter spin on that concept and poached pears with fragrant holiday spices. I used a dry Michigan Gewurztrtraminer that we bought during the trip for the poaching liquid, too. Poached fruit is so elegant, but really easy to make and great for entertaining because it can be made well in advance. I’m going to have to throw a party, just so I can serve… Continue reading

Beet Salad with Whipped Goat Cheese and Maple Walnuts

Beet Salad with Whipped Goat Cheese and Maple Walnuts Recipe // www.dulanotes.com @nicoledula

It took years of ordering beet salads in restaurants to finally realize that I should be making my own dream beet salad at home. If a beet salad is on the menu, I order it. Even though Marc is not a beet or walnut lover, he’s always pleasantly surprised that he likes the combination of beets, soft cheese and nuts. I just want to say duh, but that’s not nice. There are a few components to the recipe, but all are simple tasks that you can do while your beets steam-roast in the oven. After you assemble the salad, the… Continue reading

Vegan Roasted Cauliflower + Tahini Lemon Vinaigrette

Selden Standard's Roasted Cauliflower + Tahini Lemon Vinaigrette Recipe // www.dulanotes.com @nicoledula

I love eating out. It provides inspiration that I can bring back to my kitchen and I get excited about new flavor combinations. When I took my first bite of the roasted cauliflower at Selden Standard, I tasted the tahini + cumin + the zing of the pickled peppers mingling with the caramelized cauliflower. It was perfect. The dish isn’t fussy, but has layers of flavor. I’d never heard Marc rave about a vegetable dish like he did about this one. Chef Andy Hollyday from Selden Standard was interviewed on a local news show recently and shared how he makes his famous roasted… Continue reading

Cacao Nib Meringue Cookies

Cacao Nib Meringue Cookies Recipe // www.dulanotes.com @nicoledula

I’m always happy to have leftover egg whites from making tiramisu or ice cream or butterscotch pudding. It means I can make pretty little meringues. I treat myself to these beauties after making something rich with egg yolks, so clearly when Kate Hudson says a slim French woman taught her that a glass of red wine is her dessert, she will never understand me. And I will never have her abs. I haven’t been able to get these out of my mind, even after having more than my fair share of this batch. The bitter crunch of cacao nibs inside the… Continue reading

Vegetarian Spinach + Ricotta Stuffed Shells

Vegetarian Spinach + Ricotta Stuffed Shells Recipe // www.dulanotes.com @nicoledula

Besides spaghetti with shrimp scampi, this stuffed shells recipe was another early success in my apartment kitchen. We were newly married with limited funds and in withdrawal from our parents’ ample cable packages. I often referred to the Food Network online for recipes, having missed that channel the most. Soon we discovered Lidia’s Italy, America’s Test Kitchen and Martha’s Every Day Food on PBS. And then I found food blogs and was set for life. This recipe is adapted from Giada de Laurentiis and while I’d made it quite a few times early in our married life, it’s sadly been… Continue reading

Almond Poppy Seed Bread with Blood Orange Glaze

Almond Poppy Seed Bread with Blood Orange Glaze Recipe // www.dulanotes.com @nicoledula

The sun is shining bright and reflecting off the snow. The temps are in the single digits. This morning I picked up paczki for Fat Tuesday and I made eye contact with an older gentleman getting out of his car dressed in striped knee socks and sporting serious bed-head that happily greeted me with a “Happy Paczki Day!” I had a lime curd cream-filled one with raspberry glaze that will be on my mind until next year. I can’t complain about today. If you’re having a lime curd cream-filled day like me or not, this almond poppy seed bread will make… Continue reading

My Whisky Valentine Cocktail

My Whisky Valentine Cocktail Recipe // www.dulanotes.com @nicoledula #womenanwhiskies

Blood oranges are the prettiest, aren’t they? One looks like a sunrise while another will be the deepest red throughout. That’s why I love making cocktails with them. Last year I made a gin cocktail mixed with an easy blood orange glaze and this year I made a whisky drink. We wanted to try this Glen Grant scotch whisky because we’ve never had it and couldn’t find anything under a fancy 16 year version. We sipped a little on the rocks and loved the fruity and smooth flavor. Then we turned it into this pretty little cocktail that we hope you… Continue reading

Crispy Pork Tenderloin Schnitzel

Crispy Pork Tenderloin Schnitzel Recipe // www.dulanotes.com @nicoledula

Ah, comfort food. Sometimes it’s just what you need. Whether you’re having a bad day, it’s snowy outside or you just want to eat like your Mom made dinner. I haven’t had nearly enough schnitzel in my life and I’m looking to change that. Making Schnitzel was actually Marc’s idea and I thought it was one of his best ideas ever. It’s easy and messy to make, but biting into the crispy schnitzel is really worth it. Promise. You can get creative and add different spices and herbs to your schnitzel coating, but we kept it classic here. Just a… Continue reading

Vegan Peanut Butter + Cacao Nib Granola Bars

Vegan Peanut Butter + Cacao Nib Granola Bars Recipe // www.dulanotes.com @nicoledula

The Sunday after Christmas, we drove from my mom and dad’s in west Michigan back home to celebrate with Marc’s family. We left pretty early and stopped at our favorite coffee shop Lemonjello’s. We ordered lattes and some freshly made energy bars. We loved the chewy texture and the hearty ingredients that tasted great and kept us full until lunch. After that first bite, I wanted to try making my own. I loaded these vegan, no-bake bars with all of our favorite things. There’s peanut butter, sliced almonds, cacao nibs, hemp seeds and coconut. They’re quick and easy to make, too. You’ll… Continue reading
