You’re going to like this one. It’s hearty comfort food made with nutritious ingredients for a cozy meal you can feel good about. I’ve been all about comfort food this winter, but it sadly can’t always be carbs, carbs, carbs. This casserole comes together easily and will impress your vegetarian and non-vegetarian friends alike. It’s a great dish to bring to a friend, new mom or anyone who could use a meal hug. It freezes great, too.
Remove the cheddar cheese and you have a full-flavored vegan meal. Marc said this filling would be great on nachos and I say that’s an excellent idea. Go crazy with your favorite toppings and it gets even prettier and tastier.

Door to Door Organics provided all of the ingredients for this recipe. Their service is really convenient and I appreciate their quality and dedication to local farms and small food producers. I opt to leave a large cooler on my porch, that way they can use less packing materials and you can give any packaging materials back on your next delivery for reuse/recycling. Here’s a peek inside one of my deliveries from last March. If you’d like to try the service for yourself, check availability in your area, serving Michigan, Cleveland, Colorado, Kansas City and Milwaukee, and use code: DULANOTES to get $10 off your first order.
