I can almost put my cardigans away completely and I’ve been sprayed by more than one sprinkler already. Summer is close.
This means trips to the beach, eating outside, frosty cocktails, ice cream, windows wide open, ripe summer fruit, the farmer’s market, grilling, the smell of fresh cut grass and home-grown herbs. The sun graciously shines down on us until almost 10 pm these days.
To celebrate, I pulled my favorite summer fruit and frozen recipes from the archives for you.
A galette is a joy to make and to eat. I happily roll out the buttery dough into a rustic circle and smile as I toss the fruit with some sugar and lemon juice. This Peach and Blackberry Galette was my first galette and I’ve loved them ever since.
I woke Marc up one Saturday morning with the constant click of cherry pitting for this Sweet Cherry Galette.
I really enjoy biting into a fresh summer peach that practically requires a bath after it bursts with juice, but this Cornmeal Drop-Biscuit Cobbler is the next best thing to do with peaches.
This Watermelon Feta Salad with Mint and Lime is a sweet and savory summer dish that is great to bring to a gathering. I’m already looking forward to my first bite of watermelon!
When it’s too hot to use the oven, I turn to simple Tart Frozen Yogurt or go crazy with the mix-ins and make Coconut Milk Frozen Yogurt with Dark Chocolate and Frozen Yogurt. Frozen yogurt in minutes!
Happy summer to you!
