I’m always happy to have leftover egg whites from making tiramisu or ice cream or butterscotch pudding. It means I can make pretty little meringues. I treat myself to these beauties after making something rich with egg yolks, so clearly when Kate Hudson says a slim French woman taught her that a glass of red wine is her dessert, she will never understand me. And I will never have her abs.
I haven’t been able to get these out of my mind, even after having more than my fair share of this batch. The bitter crunch of cacao nibs inside the sweet meringues is just incredible. I’m making butterscotch pudding for Marc’s birthday this weekend and even though that pudding is something to get excited about, I think I’m even more excited about more meringues.
Pardon my uneven piping skills. I always find myself in a rush when making meringues for some reason, but as you can see in the photo above, they end up looking perfect when they’re all together.
