Cacao Nib Meringue Cookies

I’m always happy to have leftover egg whites from making tiramisu or ice cream or butterscotch pudding. It means I can make pretty little meringues. I treat myself to these beauties after making something rich with egg yolks, so clearly when Kate Hudson says a slim French woman taught her that a glass of red wine is her dessert, she will never understand me.
