Cacao Nib Meringue Cookies

Cacao Nib Meringue Cookies Recipe // @nicoledula

I’m always happy to have leftover egg whites from making tiramisu or ice cream or butterscotch pudding. It means I can make pretty little meringues. I treat myself to these beauties after making something rich with egg yolks, so clearly when Kate Hudson says a slim French woman taught her that a glass of red wine is her dessert, she will never understand me. And I will never have her abs. I haven’t been able to get these out of my mind, even after having more than my fair share of this batch. The bitter crunch of cacao nibs inside the… Continue reading

My Favorite Chocolate Chip Cookies

Perfect Chocolate Chip Cookies Recipe // @nicoledula

A friend of mine recently asked if I had a classic chocolate chip cookie recipe on my blog and it suddenly struck me that I didn’t. What the? Obviously I had to right this wrong immediately. I’m glad this recipe only makes 12 cookies, because I made a lot of batches to get this right. In the end I didn’t stray too far from the original America’s Test Kitchen recipe, but I went through a few recipes to make sure these were my favorite. They’re crispy on the edges, soft in the middle and they don’t skimp on the chocolate. A… Continue reading

Gluten-Free Tahini Chocolate Chip Cookies

Gluten-Free Tahini Chocolate Chip Cookies Recipe // Dula Notes

Today I’m doing something new and guest posting over at Autumn Makes and Does! I’m really excited to share a recipe over at Autumn’s blog where she shares beautiful, seasonal recipes that just happen to be gluten-free. And bonus, she makes a mean cocktail. Thanks for having me, Autumn! These cookies, you guys! I can’t stop looking for ways to use tahini and now I’ll always have these easy, one-bowl tahini chocolate chip cookies. Christina over at Dessert for Two inspired me to put tahini in chocolate chip cookies and I set out to make a nutty, gluten-free version. I’m… Continue reading

Vanilla Meringue Cookies

Vanilla Meringue Cookies Recipe // Dula Notes

Meringues remind me of the holidays. My Mom used to make them with colorful sprinkles on top and my brother and I loved popping them into our mouths. The contrast in texture between the crisp outside and the soft center is just fun to eat. I needed 6 egg yolks for the Bourbon Cinnamon Tiramisu and meringue cookies seemed like the right thing to do with the leftover egg whites. I grabbed a reusable piping bag and added a big open star piping tip. My hands were a little sticky, but I loved piping these guys out! They’re like snowflakes… Continue reading

Dark Chocolate Rocky Road Cookies

Rocky Road Cookies Recipe // Dula Notes

These are the cookies I made for the Bake for Their Sake auction and you just need to make them. Imagine a soft and chewy chocolate cookie with salty chopped nuts and toasted mini marshmallows on top. C’mon, right? I can’t believe it, but a man I’ve never met bought these cookies for $155. That money was then donated to Echoing Good. I was speechless and thrilled. I made a big batch of these guys and the majority went to the generous donor, but I also mailed some to a few good friends for their love and support. These cookies… Continue reading

Almond Pine Nut Cookies

Gluten-Free Almond Pine Nut Cookies Recipe // Dula Notes

Lidia Bastianich made these cookies one Saturday afternoon and they sounded simple and delicious. As luck would have it, both of those things are true. If you’ve never heard of her, Lidia Bastianich hosts Lidia’s Italy on PBS. She’s friendly, matter-of-fact, doesn’t waste a drop of any ingredient she uses and shares wonderful recipes. Her recipes are a bit rustic with nothing too fancy or out-of-reach to the average home cook. I love her bright button-down shirts and her wisp of short hair. When she tastes her food, it’s a generous bite. Her son, Joe, sometimes appears on the show… Continue reading

Gluten-Free Chocolate Chip Cookie Bake-Off

Old-Fashioned Gluten-Free Chocolate Chip Cookies Recipe // Dula Notes

I have so much to tell you guys about today! First, today marks 4 years of Dula Notes. Whoa. I can’t believe I picked St. Patrick’s Day 4 years ago to start this blog, but that’s just the way it happened. I appreciate you all so much and thank you for visiting, your comments, your support, everything. Next, obviously, things are different around here. Thanks to my friend and graphic designer Rachelle and my web developer husband, there’s a shiny new Dula Notes. We didn’t plan on having the redesign done on my blog’s 4th anniversary, but I like it. Here’s… Continue reading

Raw Vanilla Walnut Cookies

Raw Vanilla Walnut Cookies // Dula Notes

For a week now, I’ve been indulging in the treats of the season. It started with paczki on Fat Tuesday and then my valentine wined and dined me on Thursday at an authentic Italian spot with fresh pastas and the best seafood. On Saturday, I went to an Oscar movie marathon from 9 am to 10 pm. I packed healthy snacks in my little cooler, but still couldn’t resist sharing popcorn and other concession stand junk food with two of the best movie dates a girl could ask for: Meg, my fun future sister-in-law and Emily from Tar-Tryin’! Emily (who… Continue reading

Sunflower Seed Butter Chocolate Chip Cookies

I listen to NPR. A lot. It’s set on our clock radio and once we’re up, we put it on our main stereo system and listen as we get ready for the day. I listen to it as I drive to work. If a British reporter contributes to Morning Edition, I panic a little and think I’m late for work because I know the BBC Newshour starts at 9 am and I should be at work by then. On Saturdays we listen to Car Talk and then Wait, Wait, Don’t Tell Me. On Sunday mornings I look forward to This… Continue reading

Jam Thumbprint Cookies

There are mixed feelings out there for Valentine’s Day and I get that. Sure, we should appreciate our loved ones every day and seize every moment, not sparing our feelings for one day out of the year. I personally like that little nudge that prompts me to give my Valentine a few extra kisses before work and pick out a cutesy love card. I like writing down all of the mushy stuff I feel, but don’t say every day. This day doesn’t have to be about you and your significant other, though. It can also be a reminder to share… Continue reading
