Is there anything better than a summer tomato? This week’s bright color comes from rainbow chard, heirloom tomatoes, red onions and red fingerling potatoes. We have lots of healthy greens in there, too, for smoothies, salads and pesto.
This week we received red fingerling potatoes, garlic, shallot, basil, cilantro, green beans, heirloom tomatoes, tomatillos, mixed greens. Rossa di Milano onions, patty pan squash and rainbow chard.
So far, I used the patty pan squash, rainbow chard and basil to make this pasta with raw squash ribbons tossed in a basil/chard/walnut pesto inspired by Kathryne’s recent recipe. It was really delicious!
I also made this simple greek salad with a red wine and sumac vinaigrette inspired by Tracy’s Simple Greek Salad. I added a few heirloom tomatoes, thinly sliced shallot and a sprinkle of feta.
