What a crazy week! In addition to the start of our bathroom remodel and work getting busier, I attended the TEDx Detroit event on Tuesday. I really should have tracked down Charlie Wollborg and his team to thank them for such a great time. Detroit is simply bursting with creativity and new businesses despite all of the odds against it. The city has been touted the comeback kid because for every knock, Detroit impressively finds a way to reinvent itself. My eyes were glued to the stage as different people shared their stories. There’s a Shakespeare in Detroit company! Detroit Dirt takes restaurant scraps and zoo waste to create compost for urban farming! Jim Murphy, now an animator at Pixar, was born in Detroit and shared an adorable video short with us. They gave away ice cream sandwiches from Eskimo Jacks like they knew the key to my heart. The kids from The Detroit Academy of Arts and Sciences were amazing and sang a version of Jay Z’s Empire State of Mind changing the words from New York to De-troit.

In vegetable news, I’m behind on using my produce. I did make a salad last night with the salad greens and a few tomatoes with Asian Vinaigrette. I’m thinking of using the leeks and potatoes to make a frittata and I can’t wait to roast my favorite fall squash, delicata. Enjoy the weekend!
