This post is coming to you a day early because today mark five years of Dula Notes! It’s been one year since the big redesign and gluten-free chocolate chip cookie bake-off, too. Which reminds me, I must make those cookies again very, very soon. While I’m talking about my favorite things (you), I must tell you about this kimchi fried rice. I make it all. the. time. It’s one of those perfect weeknight meals that comes together quickly and you can’t believe you made it yourself. It’s flavorful, beautiful and needs to go into your weeknight routine, too. You can go the extra step and make your own kimchi and I have a link in the recipe notes for one with a vegetarian option, but I opt to send Marc to the Asian grocery store on his way home from work. Kimchi is funky and flavorful with a hint of spice. The fried rice tames some of the strong flavors in the kimchi that many American palates aren’t used to. When I first bought kimchi I tasted it and wondered what in the world I was going to do with it. THIS is what you do with it.

  3. Congratulations on 5 years, Nicole! Fried rice is also one of my favorite things to make, but I have to say that usually the kimchi goes straight from the jar to my mouth and never makes it to the fried rice. Gorgeous pics.

    • Thanks, Autumn! I’m not quite to the point where I eat the kimchi right from the jar, but it sure is tasty in fried rice! I love the flavor!
