I’ve made this recipe at least 5 times and I don’t see myself stopping. Did you know that you don’t need a special popover pan to make popovers? I certainly didn’t until Adrianna said so in her Pancakes cookbook. That’s pretty great, right? These popovers really save the day when I’m making a big salad for dinner and I want a little something special on the side. The ingredients are simple and I usually have everything on-hand to make them whenever I like (danger). They are cheesy, light and just super delicious.

I made these for Meg’s bridal shower because every brunch needs both sweet and savory goods. It was a challenge to find something savory that could be baked ahead and also taste great at room temperature. These little guys really saved the day. I brought a huge platter of minis and they went fast.

    • I love how pretty the popovers are that come out of a proper popover pan! They are surprisingly very easy to make.

  2. My mom always used a muffin tin for her popovers – except she didn’t call them popovers, she called them Yorkshire Pudding and we always ate them with roast beef. So good. So I’ve since made them in muffin tins and eat them for breakfast with jam – never tried a cheese and herb version though! Looks delicious.

    • A breakfast version with jam sounds wonderful! I forgot how close Yorkshire Pudding and popovers are. Maybe they are exactly the same. I bet they’re delicious with a side of roast beef!
