Sometimes I just need pancakes. I crave the comfort of pancakes from time to time because I rarely have them. I’ve shared with you before that my husband is not a breakfast fan and as a result, my breakfast repertoire is not fully developed. Fortunately, though, I can muster a pretty good waffle and a tasty pancake in a breakfast emergency.
I had ripe peaches on the counter and leftover buttermilk and homemade crème fraîche in the refrigerator. Delicious pancakes just seemed meant to be.
These are a special treat. Once you taste the buttery syrup over the peachy pancakes, you’ll see for yourself. I added a bit of white whole wheat flour and some ground flax seed to offset the indulgent ingredients. I just had to. It made me feel better about adding a second dose of syrup.
