While in college, I would sometimes go to the big mall that was about 25 minutes from my parents’ house. That seems like nothing now, but we lived in a smallish city where everything was about 10 minutes away. I couldn’t always afford to buy something during those unpaid teaching assistant and full-time class load days, but I used to indulge in a pineapple peach smoothie at the big mall. I’d park on the upper parking deck, the entrance closest to that smoothie place. I could grab my smoothie and browse at the Gap around the corner or take the escalator down to Banana Republic to look for professional, but trendy teacher attire in the sale section. At the time, I felt like I had to be careful or I would end up in a shapeless teacher dress with pencil and ruler appliques on it. Like it was a cold I could catch.
I didn’t end up becoming a teacher and I get to wear whatever I like to work now. I’m grateful that I have a good job doing what I love and that I can buy a new dress or a shirt every once in a while. I still stick to the sale section, though. I love that I make the smoothies now. I haven’t had that pineapple peach one in quite some time and I wonder if I’d still like it as much.
This smoothie is the healthy green version of that smoothie from my college days. This one is packed full of vitamin-rich greens and Omega – 3 fatty acids from the chia seeds. Now that peaches are in season, the juicy peach flavor comes right through and mingles perfectly with the pineapple. I think you’ll love it.
