I like a little bit of sweet in my day and usually it’s dark chocolate, but sometimes a girl just has to bake. This easy coffee cake has the most beautiful golden brown topping with crunchy bits of pistachio and coconut mingled with fresh spices. It’s the grown up, tastier version of those sad Little Debbie coffee cakes. Remember those? I always felt very adult eating them as a kid, probably because it had the word coffee in it.
This kind of cake just makes me smile because it is best shared with a good friend over a hot cup of coffee or tea. Like the Golden Girls gossiping over cheesecake. It’s just the type of cake my Oma would have baked for guests. When you dip your fork into it, it makes a beautiful crumby mess. Don’t worry, though, the tender cake can be pressed with the back of your fork to make sure you get every last morsel.

Oh, ha! Well, Little Debbie makes sugary snack cakes meant for lunch boxes and Mom bought them rarely, so they seemed special. This coffee cakes is way better 🙂
