I went to the grocery store this morning, but this time it was a little different. Marc is heading to SXSW for work on Thursday and I was shopping for anything my heart desired. He will no doubt eat his own body weight in food truck burritos and have a fantastic time in Austin. Meanwhile, I will be eating arugula salads, kale, soft-poached eggs, avocados smashed on toast, pancakes for one, a hunk of Humboldt Fog cheese and roasted sweet potatoes on everything. I’ll miss him terribly, but I’m stoked about the lady dinners I’ll eat in my pj’s while watching British movies. My own idea of a fantastic time.
One recipe we’re both digging lately for these Raw Vanilla Walnut Cookies and I was ready for a chocolate version to snack on. It comes together quickly in the food processor, just like the cookies. I am happy to report that they are a delight. The cacao and espresso give them intense dark chocolate flavor and they are delicious without being super sweet. This snack will take care of your sweet tooth while the nuts and dates will give you energy and fill you up. They’re a win-win.
While we are talking about raw foods, my friend Nancy invited me to a raw foods workshop at her yoga studio and we went last Friday. We met for dinner and drinks before and had a great night. Laura, the instructor, made a different version of raw brownies, a key lime mousse, an orange cream tart and banana soft serve. It was lots of fun and I learned some new things. During class, I couldn’t help but think of new recipe ideas based on the ingredients and techniques Laura shared. Everything was vegan and gluten-free, too. It’s amazing what you can do with whole foods.
