All of the stars aligned to make this recipe happen. I had plenty of green lettuce in the house and one of the heads from my CSA was a better version of iceberg, which always makes me think of bacon and blue cheese dressing. I went to Whole Foods and spent some quality time in the cheese department and saw that Roth Kase’s Moody Blue, a smoked blue cheese dressing, was on sale. I could smell the smoke through the plastic wrap. It intrigued me and then the cheese sign said, “For salads that wish they had bacon.” Then it dawned on me how this dressing with smoked blue cheese would be perfect for my vegetarian friends. And if you really want to impress your vegetarian friends, make coconut bacon for sprinkling on top, too.
And if you’re not vegetarian, crumbled bacon on top is (always) amazing. I was afraid that all of the smokiness in the cheese and in the bacon might get out of hand, but no! If you want to make this salad, wash and dry your favorite salad greens, drizzle generously with blue cheese dressing and top with a slice of crumbled bacon and extra chive snips. Salad heaven.
Side note: I hate spending lots of money on fancy cheese, only to find out that I don’t like it. I recommend Roth Kase’s Wisconsin cheese in Moody Blue for the smoked version or Roth Kase’s Buttermilk Blue for a regular blue cheese because the Whole Foods cheese guy once recommended it to me and I think it’s perfect.
