If you belong to a CSA or have a home garden, you are likely well stocked with zucchini or summer squash. Finding new and interesting ways to enjoy it can be a challenge, but I do like a kitchen challenge. The good news is that squash is versatile and can dazzle in both sweet and savory dishes.
The recipe I’m sharing today can be dinner on a busy weeknight, a side for a summer gathering or packed for a picnic. The quinoa cooks while the veggies are quickly sautéed with spices until tender. Thankfully, minimal heat is required to get this on the table during those hot summer days.
Afraid this recipe won’t make a dent in your squash stash? I have you covered! Try these other summer squash recipes and feel free to sub in zucchini.
