Spiced Summer Squash and Quinoa Bowl

If you belong to a CSA or have a home garden, you are likely well stocked with zucchini or summer squash. Finding new and interesting ways to enjoy it can be a challenge, but I do like a kitchen challenge. The good news is that squash is versatile and can dazzle in both sweet and savory dishes.

The recipe I’m sharing today can be dinner on a busy weeknight, a side for a summer gathering or packed for a picnic. The quinoa cooks while the veggies are quickly sautéed with spices until tender. Thankfully, minimal heat is required to get this on the table during those hot summer days.

  1. It’s not squash season yet though I’m sure we’ll get plenty from our CSA soon! I’ll have to give this a try as I pretty much love everything here & might just have to top with feta cheese too 🙂

  2. It all looks delicious! Last year I had my first garden, and I really learned to love squash. My fav way to prepare it is sautéed in olive oil with cherry tomatoes, herbs, and served with goat cheese.

    • Jess – Your preparation sounds wonderful! The baked eggs and summer squash recipe has goat cheese and tomatoes, too and I think the flavors work so well together!
